Ingredients

  • 1 cup Florida Orange Juice
  • Zest of 1 Florida Orange
  • 6 cups fresh broccoli
  • ¼ cup olive oil
  • 1 grated carrot
  • ¼ cup golden raisins
  • Salt and pepper to taste
  • ½ cup chopped pecans

Preparation

Broccoli Salad with Orange Vinaigrette

1. Steam broccoli in a basket over boiling water with Florida Orange zest added for 8 to 10 minutes or just until tender crisp.

2. Meanwhile, combine Florida Orange Juice, olive oil, carrot, raisins, salt and pepper in large bowl and mix well to combine.

3. Drain broccoli and add to vinaigrette, tossing to coat. Sprinkle with pecans, tossing gently. Serve hot or at room temperature.
