Egg And Spinach Scramble With Cafe Au Lait

Ingredients

  • Cooking spray
  • 1 egg + 2 egg whites, beaten*
  • 1 ½ cups baby spinach
  • 1 tbsp. chopped chives
  • Salt and pepper to taste

For Café au Lait

  • 1 cup (8 oz.) hot coffee
  • 1 cup 2% milk or soy milk, warmed

Preparation

Egg And Spinach Scramble With Cafe Au Lait

1. Spray skillet with cooking spray and cook eggs with spinach. Top with fresh chives, salt and pepper.

2. For café au lait, combine coffee with milk.

*Vegan: Swap 3 oz. tofu (about ¼ package) mashed with ⅛ tsp. turmeric to resemble eggs.
