- 1 whole grain pita
- 2 cups mixed salad greens
- 1 cup chopped tomatoes
- 1 cup chopped cucumbers
- 2 oz. diced grilled chicken
- 3 tbsp. crumbled feta cheese*
- ½ lemon, juiced
- ⅛ tsp. dried dill
*To save time, use skinless rotisserie chicken.
1. Cut pita in half and toast in a toaster. Break up into crouton-like pieces and toss with remaining ingredients in a large salad bowl. Serve immediately.
*Vegetarian/vegan: Swap chicken with 4 tablespoons of hummus and swap feta for 3 tablespoons of chopped olives.
