- 1/4 cup canned white beans, rinsed and drained
- 1/2 cup diced tomatoes
- 1/4 cup diced zucchini
- 2 tablespoons chopped olives
- 2 tablespoons chopped fresh basil
- 1/2 lemon, juiced
- Sea salt and black pepper, to taste
- 1 whole grain pita
- 1 container (6 ounces) Greek plain low-fat yogurt*
- 1/2 teaspoon cinnamon
- Combine beans, tomatoes, zucchini, olives, basil, lemon juice, salt and pepper. Serve with pita. Enjoy yogurt with cinnamon on the side.
*Vegan: Use soy or coconut yogurt.
