Pecan and Orange Rice Salad


  • 2-1/2 cups Florida Orange Juice
  • 1 cup Florida Orange segments
  • 3 cups instant white rice
  • 1/2 teaspoon salt
  • 1/8 cup butter
  • 1/2 cup chopped pecans


Pecan and Orange Rice Salad

1. Place orange juice in 3-quart saucepan; bring to a boil.

2. Add rice and salt; stir well and simmer over low heat for 3 minutes. Remove saucepan from heat.

3. Add butter; cover with lid and let stand 5 minutes.

4. Fluff rice with fork; stir in chopped pecans and orange segments.
