Ingredients

  • 1 Florida Grapefruit
  • 100ml freshly squeezed Florida Grapefruit juice
  • 320g roll of puff pastry
  • 3 tablespoons custard powder
  • 2 tablespoons sugar
  • 200ml milk
  • 4 Granny Smith apples, peeled, cored, and sliced
  • 1 beaten egg
  • 1 tablespoon sugar

Instructions

  1. Make the custard: place the custard powder and sugar into a jug with the milk, then stir until fully dissolved.
  2. Add the Florida Grapefruit Juice, giving it another good stir.
  3. Transfer the mixture to the microwave and heat for 3 minutes, stopping every minute to stir. This ensures a smooth, thick custard that’s full of flavour.
  4. Prepare the pastry: roll out the puff pastry and score a 1cm border around the edge with a sharp knife—this helps create a beautiful, golden crust.
  5. Transfer the pastry to a non-stick baking tray lined with parchment paper.
  6. Brush the edges with beaten egg and sprinkle with sugar for a crispy, caramelised finish.
  7. Assemble the galette: spread the custard evenly over the pastry, staying within the border.
  8. Layer the sliced apples on top, making sure to fully cover the custard.
  9. Finish with a light sprinkle of sugar over the apples.
  10. Bake: pop it into a preheated oven at 340°F and bake for 25 minutes, or until the pastry is golden and crisp.
  11. Just before serving, grate over some fresh Florida Grapefruit zest for an extra burst of citrus aroma.
