Ingredients

  • 2 Florida Grapefruit
  • 1 thumb fresh ginger
  • 2 tablespoons sesame oil
  • 1 mango, peeled and sliced
  • 1 papaya, peeled and sliced
  • 3 carrots, peeled and finely sliced
  • 1 handful fresh Thai basil
  • 1 handful fresh mint
  • 1/2 cup peanuts, toastes
  • 1 tablespoon sesame seeds, toasted

Instructions

  1. Prep the grapefruit: peel and segment the Florida Grapefruit, catching any juices as you go, and place the segments into a mixing bowl.
  2. Zest the fresh ginger straight into the bowl for that warming, aromatic kick.
  3. Squeeze the remaining Florida Grapefruit halves over the segments, making sure to get every drop of juice—this forms the base of a zesty, fresh dressing.
  4. Pour over the sesame oil, then stir everything together.
  5. Assemble the salad: add the sliced mango, papaya, and carrots into a large bowl, then gently mix to coat everything in the grapefruit and sesame dressing.
  6. Finish with crunch & herbs: sprinkle in the toasted peanuts and sesame seeds, then add the fresh Thai basil and mint for an amazing burst of fragrance. Give everything a final toss to combine. Serve & enjoy!
