- 1 cup sugar
- 16 ounces heavy cream
- 2 eggs, yolks and whites separated
- 8 ounces mascarpone cheese
- 1 teaspoon iodized salt
- 1 cup dried cranberries
- 1 whole Florida Orange, cut into segments
Instructions
- In a mixing bowl, combine 1/2 sugar, heavy cream, and egg whites and whisk until stiff peaks form.
- In another mixing bowl, combine the mascarpone cheese, orange juice, remaining sugar, and salt. Whisk until fully mixed and viscous.
- Fold the egg whites and dried cranberries into orange juice-egg yolk mixture until the mixture looks streaky and has wisps of light yellow.
