- 1 Florida Grapefruit (zested and juiced)
- 8 ounces feta cheese
- 1 tablespoon extra virgin olive oil
- 1 red chili, finely chopped
- 100g sourdough bread
- 1 1/2 tablespoons fresh parsley
- 1 1/2 tablespoons fresh mint
- 4 slices of toasted sourdough bread
Instructions
- Prepare the feta: place the feta cheese in a baking dish, then drizzle over the olive oil and Florida Grapefruit juice— this brings a gorgeous citrusy balance to the rich, salty cheese.
- Make the gremolata: in a food processor, blend together the bread, parsley, mint, grapefruit zest, and a drizzle of olive oil until you get a coarse, crunchy crumb.
- Assemble and bake: sprinkle the finely chopped red chili over the feta, then top with the gremolata mixture, pressing it gently onto the cheese.
- Bake: preheat your oven to 340°F and bake for 15 minutes, or until the feta is softened and the topping is golden and crisp.
- Serve and enjoy! Place the baked feta in the centre of the table with toasted sourdough on the side.
