- 2 Florida Grapefruit
- 1/3 cup chia seeds
- 200ml coconut milk
- 2 tablespoons honey
- 1 teaspoon vanilla extract
- 1 pinch of cinnamon
- 2 tablespoons pistachios, shelled and toasted
- 2 tablespoons coconut shavings
Instructions
The day before:
- Remove a few zests from a Florida Grapefruit, then squeeze its juice.
- Mix the coconut milk with the chia seeds.
- Finely chop the zest and add to the mixture.
- Add 1 tablespoon of honey and the vanilla extract, then leave to stand for at least 3 hours or ideally overnight, for the texture to thicken.
The day of:
- Peel the second Florida Grapefruit and cut into segments. Mix with the cinnamon and the second spoonful of honey.
- Place half the segments in the glasses, then fill them with the chia pudding.
- Sprinkle the remaining grapefruit slices over the top.
- Finish with a sprinkling of crushed toasted pistachios and coconut shavings for a touch of crunch and freshness.
