Is it a salsa, a dip or a bean salad? We say … yes to all! No matter how you define it, our Cowboy Caviar with Florida Orange Juice Dressing is just plain tasty. You’ll find all the classic ingredients – black beans, black-eyed peas, corn, tomatoes, peppers and onion – kicked up a notch with our bright, tangy dressing. Enjoy it as an app or side. And, like you, this recipe only gets better with time – make it ahead or savor any leftovers the next day.

Ingredients

Orange Juice Dressing

  • 1 cup Florida Orange Juice
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons lime juice
  • 1/4 cup extra virgin olive oil
  • 1 tablespoon honey
  • 2 cloves garlic, finely minced
  • 1 tablespoon orange zest
  • 1 ½ – 2 tablespoons kosher salt* (see note on salt)
  • 1 teaspoon freshly ground black pepper

Cowboy Caviar

  • 1 can (15 oz/425g) black beans, drained and rinsed
  • 2 cans (15 oz/425g each) black-eyed peas, drained and rinsed
  • 2 cans (15 oz/425g each) sweet corn kernels, drained and rinsed
  • 1 ½ cups (about 3 medium) Roma tomatoes, de-seeded and diced
  • 1 cup (about 1 medium) red bell pepper, diced
  • 1 cup (about 1 medium) orange bell pepper, diced
  • 1 cup (about 1 medium) red onion, diced
  • ¾ cup (about 3-4 medium) jalapeño peppers, seeds removed and finely diced
  • 1 cup (about 1 bunch) fresh cilantro, minced
  • 1 cup (about one medium) avocado, diced

Instructions

  1. Start by making the dressing. In a medium bowl, whisk together fresh orange juice, apple cider vinegar, lime juice, olive oil, honey, minced garlic, orange zest, kosher salt, and black pepper until well combined.
  2. In a separate non-reactive large mixing bowl, combine drained and rinsed black beans, black-eyed peas, and corn kernels.
  3. Add chopped Roma tomatoes, diced red bell pepper, diced orange bell pepper, and diced red onion to the bean mixture.
  4. Stir in finely diced jalapeños, minced cilantro, and avocado.
  5. Pour the dressing over the cowboy caviar mixture and toss thoroughly to coat all ingredients evenly.
  6. Cover the bowl tightly and refrigerate for at least 2 hours to allow flavors to develop and beans to absorb the dressing.
  7. Taste and adjust seasoning with additional seasonings if needed.
  8. Serve with chips, proteins, and more.

Notes

  • Salt Content: The kosher salt may seem like a lot, but it’s necessary to properly season the beans and vegetables – don’t reduce it.
  • For best flavor development, marinate for up to 24 hours in the refrigerator.
