Orange Juice Dressing
- 1 cup Florida Orange Juice
- 2 tablespoons apple cider vinegar
- 2 tablespoons lime juice
- 1/4 cup extra virgin olive oil
- 1 tablespoon honey
- 2 cloves garlic, finely minced
- 1 tablespoon orange zest
- 1 ½ – 2 tablespoons kosher salt* (see note on salt)
- 1 teaspoon freshly ground black pepper
Cowboy Caviar
- 1 can (15 oz/425g) black beans, drained and rinsed
- 2 cans (15 oz/425g each) black-eyed peas, drained and rinsed
- 2 cans (15 oz/425g each) sweet corn kernels, drained and rinsed
- 1 ½ cups (about 3 medium) Roma tomatoes, de-seeded and diced
- 1 cup (about 1 medium) red bell pepper, diced
- 1 cup (about 1 medium) orange bell pepper, diced
- 1 cup (about 1 medium) red onion, diced
- ¾ cup (about 3-4 medium) jalapeño peppers, seeds removed and finely diced
- 1 cup (about 1 bunch) fresh cilantro, minced
- 1 cup (about one medium) avocado, diced
Instructions
- Start by making the dressing. In a medium bowl, whisk together fresh orange juice, apple cider vinegar, lime juice, olive oil, honey, minced garlic, orange zest, kosher salt, and black pepper until well combined.
- In a separate non-reactive large mixing bowl, combine drained and rinsed black beans, black-eyed peas, and corn kernels.
- Add chopped Roma tomatoes, diced red bell pepper, diced orange bell pepper, and diced red onion to the bean mixture.
- Stir in finely diced jalapeños, minced cilantro, and avocado.
- Pour the dressing over the cowboy caviar mixture and toss thoroughly to coat all ingredients evenly.
- Cover the bowl tightly and refrigerate for at least 2 hours to allow flavors to develop and beans to absorb the dressing.
- Taste and adjust seasoning with additional seasonings if needed.
- Serve with chips, proteins, and more.
Notes
- Salt Content: The kosher salt may seem like a lot, but it’s necessary to properly season the beans and vegetables – don’t reduce it.
- For best flavor development, marinate for up to 24 hours in the refrigerator.
