Florida Grapefruit Caprese Salad

Sometimes simplicity tastes best: fresh Florida Grapefruit, tomatoes, basil and mozzarella with a balsamic reduction and a drizzle of olive oil, plus salt and pepper to taste. This recipe is a breeze to prepare, and easy to enjoy too.

 

Ingredients

  • 1 Florida Grapefruit, segmented and juiced
  • 1 cup cherry tomatoes, sliced in half
  • 1/2 cup buffalo mozzarella, torn into small pieces
  • 2 tbsp. olive oil
  • 1 cup balsamic vinegar
  • 2 sprigs fresh basil
  • Salt and pepper to taste

Instructions

  1. Marinate the Florida Grapefruit segments in ½ cup of the balsamic vinegar, add the remainder to a small pot over medium heat and reduce by half.
  2. Combine the tomatoes, mozzarella, and Florida Grapefruit slices in a bowl and toss; arrange on a plate and drizzle the vinegar reduction and olive oil over top.
