Ingredients

Sweet & Sour Sauce:

  • 1 Florida Grapefruit
  • 1/3 cup rice vinegar
  • 1 cup sugar
  • 1 clove garlic, minced
  • 1 tablespoon soy sauce
  • 1 tablespoon chili flakes
  • 3 teaspoons cornstarch

Marinated Tofu:

  • 4 tofu steaks, approximately 4.5 ounces each
  • 4 tablespoons barbecue sauce
  • 2 tablespoons apple cider vinegar
  • 1 clove garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt

Burgers:

  • 4 hamburger buns
  • 1 Florida Grapefruit, sliced
  • 1 avocado, sliced
  • 1/2 red onion, sliced
  • 4 large Bibb lettuce leaves

Instructions

Sweet & Sour Sauce:

  1. Juice one Florida Grapefruit; keep 2–3 tablespoons and set aside.
  2. In a saucepan, toast chili flakes over medium heat (dry) for 3 minutes to release aroma.
  3. Add rice vinegar, sugar, minced garlic, soy sauce, and grapefruit juice.
  4. Boil and reduce until syrupy. Lower heat.
  5. Mix cornstarch with a bit of reserved grapefruit juice and whisk into the sauce until thickened.
  6. Cool and store in a jar; keeps up to 2 weeks in the fridge.

Tofu:

  1. Place the tofu steaks between 2 sheets of parchment paper. Place the steaks between two planks to apply pressure, and remove as much water as possible. Leave to stand for 30 minutes. Cook over low heat until all liquids have been absorbed.
  2. Meanwhile, prepare the marinade. Mix all the marinade ingredients and pour into a freezer bag. Place the steaks in the bag and let them marinate for at least 30 minutes.
  3. Pan-sear or grill tofu with its marinade until heated through and slightly charred.

Assemble the burgers:

  1. Lightly toast the buns in a pan; spoon the sauce onto the bottom bun, then add the lettuce, tofu, grapefruit, sliced avocado, and red onion slices.
