- 1- 1/3 cups Florida Orange Juice
- 2 tablespoons cornstarch
- ½ cup sugar
- 1 egg yolk
- puff pastry, thawed
Instructions
- Preheat your oven to 400ºF.
- In a small saucepan over high heat, combine Florida Orange Juice, cornstarch, sugar, and the egg yolk. Whisk until boiling, about 5 minutes.
- Remove the curd from heat and let chill in an ice bath for 10-20 minutes. Wrap with plastic and chill until needed.
- Trim the puff pastry into long triangles.
- Spoon a small amount of curd at the base of each triangle, and roll towards the point, creating a crescent shape.
- Place croissants on a baking sheet and bake until brown and puffy.
- Let cool slightly before serving.
