Ingredients

Florida Citrus Sauce

  • 2 Florida oranges, juiced
  • ¼ cup of Florida Grapefruit Juice
  • 2 lemons, juiced
  • 2 limes, juiced
  • 5 cloves garlic, minced
  • 1 yellow onion, diced
  • 1 tablespoon cornstarch
  • 2 cups soy sauce
  • 1 1/2 cups brown sugar
  • 12 ounces lemon lime soda
  • 1/4 cup sriracha

Braised Duck

  • 1 duck breast, about 12 ounces, skin scored in mini hatch pattern
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 teaspoon sesame oil
  • 1 teaspoon vegetable oil
  • 1 sprig of thyme
  • 1 clove garlic
  • 1 tablespoon butter

Instructions

  1. Combine all sauce ingredients in a blender and blend until smooth.
  2. Pour the mixture into a saucepot, and cook on medium-high until sauce has reduced by 50%; hold at room temperature while cooking the duck.
  3. Season the duck with salt and pepper evenly and liberally.
  4. In a cold metal skillet, add sesame and vegetable oils and coat the pan.
  5. Place the duck, skin side down, on a cold oiled pan and turn the heat to medium-low.
  6. Constantly press the duck down so the skin hits the entire surface of the pan as it heats. Cook and press the duck until skin is dark golden brown (about 6-8 mins).
  7. Flip duck in the pan and add thyme, garlic clove, and butter; baste the duck as it cooks, ensuring oil is also hitting the thyme and garlic as you baste.
  8. Baste and cook on medium heat for another 5 minutes. Let duck rest for 3 minutes before slicing into thin strips to serve.
