Florida Orange Juice Cranberry Scone

You’ll never go back to making scones the same again…the citrus twist to a classic cranberry scone is melt-in-your-mouth delicious. A perfect pastry to enjoy in the morning, afternoon, or evening.

Ingredients

  • 3 cups Florida Orange Juice
  • 1/4 cup powdered sugar
  • ½ cup butter, frozen
  • 2 cups flour
  • ½ cup sugar
  • 2 ½ teaspoons baking powder
  • ½ teaspoon salt
  • ½ cup heavy cream
  • 1 egg, plus one egg white
  • 1 teaspoon vanilla extract
  • 1 cup dried cranberries

Instructions

  1. Grate the frozen butter into a medium bowl. Add the flour, sugar, baking powder and salt. Combine with your hands, working quickly, until the dough comes together in pea-sized pieces.
  2. Whisk together the heavy cream, egg, and vanilla, then add to the flour mixture. The dough will be very sticky, but you should be able to work with it. Add a little more flour if needed.
  3. Turn the dough out onto a lightly floured surface. Shape the dough into a ball, then squish into a disc, about 8” across. Wrap with plastic and let chill for at least 15 minutes.
  4. Preheat oven to 400ºF.
  5.  In a medium saucepan over medium-high heat, combine the Florida Orange Juice and powdered sugar. Bring to a boil and cook down until slightly thickened.
  6. Arrange the chilled scones on a lined baking sheet, brush with the egg white, and bake for about 10-12 minutes.
  7. Remove from the oven and let cool slightly before drizzling the orange juice glaze on top. Enjoy!
