Ingredients
- 1/2 cup Florida Orange Juice
- 2 cups gluten-free oat flour (see homemade option*)
- ½ cup super fine almond flour (see homemade option*)
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/4 teaspoon sea salt
- 1 cup gently mashed ripe banana (approximately 2 large bananas)
- 3/4 cup water
- 2 tablespoons pure maple syrup
- 2 teaspoons pure vanilla extract
- 2 teaspoons freshly grated orange zest
Optional Toppings
- Sliced bananas
- Sliced strawberries
- Orange wedges
- Additional orange zest
- Maple syrup
Instructions
- Preheat waffle iron according to manufacturer instructions.
- In a large bowl, whisk together oat flour, almond flour, baking powder, baking soda, and sea salt.
- Stir in Florida Orange Juice, mashed banana, water, maple syrup, vanilla extract, and orange zest until smooth.
- Lightly grease the waffle iron as needed. Pour about ½ cup of batter into the preheated waffle iron and cook until golden brown, crisp on the outside, and cooked through.
- Serve warm with sliced bananas, strawberries, orange wedges, additional orange zest, and maple syrup, if desired.
Notes:
*Homemade options:
- To make your own oat flour, pulse 2 cups of rolled oats in a food processor until finely ground.
- To make your own almond flour, pulse ½ cup of blanched almonds until a fine, sandy consistency is achieved — be careful not to over-process, or it may turn into almond butter.
