Ingredients

  • 1/2 cup Florida Orange Juice
  • 2 cups gluten-free oat flour (see homemade option*)
  • ½ cup super fine almond flour (see homemade option*)
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon sea salt
  • 1 cup gently mashed ripe banana (approximately 2 large bananas)
  • 3/4 cup water
  • 2 tablespoons pure maple syrup
  • 2 teaspoons pure vanilla extract
  • 2 teaspoons freshly grated orange zest

Optional Toppings

  • Sliced bananas
  • Sliced strawberries
  • Orange wedges
  • Additional orange zest
  • Maple syrup

Instructions

  1. Preheat waffle iron according to manufacturer instructions.
  2. In a large bowl, whisk together oat flour, almond flour, baking powder, baking soda, and sea salt.
  3. Stir in Florida Orange Juice, mashed banana, water, maple syrup, vanilla extract, and orange zest until smooth.
  4. Lightly grease the waffle iron as needed. Pour about ½ cup of batter into the preheated waffle iron and cook until golden brown, crisp on the outside, and cooked through.
  5. Serve warm with sliced bananas, strawberries, orange wedges, additional orange zest, and maple syrup, if desired.

Notes:

*Homemade options:

  • To make your own oat flour, pulse 2 cups of rolled oats in a food processor until finely ground.
  • To make your own almond flour, pulse ½ cup of blanched almonds until a fine, sandy consistency is achieved — be careful not to over-process, or it may turn into almond butter.
