For the Pancakes
- 1 1/4 cups Florida Orange Juice
- 1 1/4 cup whole wheat pastry flour
- 1 cup unbleached all-purpose flour
- 1 tablespoon sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 3/4 teaspoon salt
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- Pinch of ground cardamom
- 2 eggs, beaten
- 1 1/4 cups non-fat buttermilk
- 1 cup blueberries (optional)
- Non-stick spray
For the Florida OJ maple syrup
- 1/4 cup Florida Orange Juice
- 1/2 cup maple syrup
Instructions
Make Pancake Mix:
- Place the flours, sugar, baking powder, baking soda, salt, cinnamon, nutmeg and cardamom into a large mixing bowl and whisk to combine.
- Place the Florida Orange Juice, eggs and buttermilk in a medium mixing bowl and whisk to combine. Add the liquid to the dry mixture and stir together with a spatula just until combined. There should still be lumps. Do not overmix. Fold in the blueberries.
Make Syrup:
- Pour Florida Orange Juice and maple syrup into a small mixing bowl and whisk to combine. Pour into a dispenser.
Cook Pancakes:
- Spray an electric griddle or skillet with non-stick spray and set over medium-high heat.
- Once the pan is hot, scoop 1/4 cup of batter into the pan and cook until bubbles form around the edges and the pancake is golden brown, 3 to 4 minutes. Flip and cook on the other side until golden, 2 to 3 minutes. Transfer to an ovenproof plate and keep warm in the oven. Repeat until all the batter is cooked.
- Serve with Florida OJ maple syrup.
