Ingredients
- 2 tablespoons Florida Orange Juice
- 1½ cups low-fat (1% fat) cottage cheese
- ½ teaspoon fresh grated orange zest
- 1½ teaspoons honey
- ½ teaspoon pure vanilla extract
- 1 tablespoon chia seeds
- 1 Florida Orange, segmented
- ½ cup fresh or thawed frozen raspberries
- 2 tablespoons chopped walnuts
- Date syrup (optional topping)
- Cacao nibs (optional topping)
Instructions
- In a food processor or blender, puree together the cottage cheese, Florida Orange Juice, zest, honey, and vanilla until silky smooth.
- Pulse or stir in the chia seeds.
- Divide the cottage cheese mixture into two bowls. Let stand 10 minutes to allow chia seeds to “gel.”
- Top with the orange segments, raspberries, walnuts and, if using, a sprinkling of date syrup and/or cacao nibs. Serve.
- Time-saving tip: Follow steps 1 – 3; cover and refrigerate overnight; top and enjoy in the morning. Or skip the pureeing for a bowl with lots of texture.
- Serving tip: Pair with whole-grain toast or avocado toast.
