- 1 cup Florida Orange Juice
- 3 tablespoons honey
- ⅛ teaspoon salt
- 3-4 sprigs fresh thyme
- 1 tablespoon unsalted butter
- 1 (8-ounce) wheel Brie, rind on
- ¼ cup sliced almonds
- 1 teaspoon fresh thyme leaves, optional for garnish
- ¼ teaspoon flaky sea salt, for finishing
- Sliced baguette and/or crackers, for serving
Instructions
- Preheat the oven to 350°F. Line a small baking sheet or oven-safe dish with parchment paper.
- Combine the orange juice, honey, and salt in a small saucepan over medium heat. Once the honey dissolves, add the thyme sprigs. Simmer, stirring occasionally, until reduced to a glossy syrup that coats the back of a spoon and holds a line when you run a finger across it, about 12-16 minutes (you’ll have a generous ⅓ cup).
- Discard the thyme sprigs and stir in the butter. The glaze thickens as it cools; if it ever firms up too much, loosen it with a splash of orange juice.
- Score the top rind of the Brie in a shallow crosshatch. Place on the prepared sheet and brush the scored top lightly with a little of the glaze. Bake for 12-15 minutes, until the center feels soft and molten when gently pressed, but the wheel still holds its shape.
- While the Brie bakes, toast the sliced almonds in a dry skillet over medium-low heat, stirring constantly, until golden, 3 to 4 minutes. Transfer to a plate.
- Carefully transfer the warm Brie to a serving plate. Let the remaining glaze cool for 2 to 3 minutes so it thickens slightly, then spoon it generously over the top, letting it pool and drip down the sides. Toss the toasted almonds in a spoonful of the warm glaze, then scatter them over the Brie along with the fresh thyme leaves. Finish with flaky sea salt.
