Florida Orange Juice Glaze

  • 1 cup Florida Orange Juice
  • ¼ cup pure maple syrup
  • ½ teaspoon red pepper flakes
  • 2 tablespoons cold unsalted butter, cut into pieces
  • ¼ teaspoon salt, or to taste
  • ⅛ teaspoon freshly ground black pepper, or to taste

Breakfast Sandwiches:

  • 4 English muffins, split
  • 4 breakfast sausage patties
  • 4 large eggs
  • 4 slices sharp cheddar cheese
  • 2 tablespoons unsalted butter, for toasting and frying
  • ¼ teaspoon salt, or to taste
  • ⅛ teaspoon freshly ground black pepper, or to taste

Instructions

  1. In a wide skillet or small saucepan over medium-high heat, combine the orange juice, maple syrup, and red pepper flakes. Bring to a boil, then reduce to a steady simmer. Cook for 15 to 25 minutes, until syrupy and reduced to about ⅓ cup. The glaze is ready when it just coats the back of a spoon, and the trail from your spoon holds for a moment before filling back in. Pull from the heat slightly early; the glaze will continue to thicken as it cools. 
  2. Remove the glaze from the heat. Add the cold butter pieces a few at a time, swirling or whisking constantly, until melted and emulsified into a glossy glaze. Season with salt and black pepper. Keep warm.
  3. Melt 1 tablespoon of the butter in a large skillet over medium heat. Toast the muffin halves cut-side down until golden, 2–3 minutes. Transfer to a plate.
  4. In the same skillet over medium-high heat, sear the sausage patties until deeply browned and cooked through, about 3 minutes per side. In the final minute, brush the tops generously with warm glaze, flip, and brush the second side until the patties are evenly coated and glossy. Remove the skillet from the heat. 
  5. Place a slice of cheddar on each glazed patty. Cover the skillet with a lid for 45–60 seconds, until the cheese softens and just melts. 
  6. In a separate nonstick skillet, melt the remaining tablespoon of butter over medium-low heat. Crack the eggs into the pan, season with the salt and pepper, and cover briefly to set the whites without firming the yolks, about 2 minutes. Pull from the heat while the yolks are still runny.
  7. Place a glazed patty with melted cheese on each muffin bottom. Top with a fried egg. Brush the underside of each top muffin with a little extra warm glaze. Top with the muffin tops and serve immediately.
