Shortbread Crust:
- 1/2 cup unsalted butter, melted
- 1/4 cup sugar
- 1 cup all-purpose flour
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Grapefruit Filling:
- 1 cup sugar
- 3 tablespoons all-purpose flour
- 3 eggs
- 1/2 cup freshly squeezed Florida Grapefruit (or Florida Grapefruit Juice)
- 3 teaspoons grapefruit zest
Instructions
- Preheat the oven to 350°F. Line a 9×9 glass baking dish with parchment paper.
- In a medium bowl, mix the melted butter, sugar, flour, vanilla extract, and salt until combined.
- Press the dough evenly in the baking dish and bake for 18-20 minutes. Remove from the oven and set aside.
- In a medium bowl, whisk the sugar, flour, eggs, grapefruit juice, and grapefruit zest until well combined.
- Pour filling mixture over warm crust and bake for 25-30 minutes. minutes, or until the center is set.
- Let bars cool completely at room temperature and refrigerate for at least 2 hours before serving.
Optional: dust with powdered sugar before cutting and serving.
