Ingredients

Crust:

  • 21 sheets graham crackers, finely ground
  • 6 tablespoons sugar
  • 8 tablespoons butter, melted

Filling:

  • 2 pounds cream cheese, softened
  • 1 cup sugar
  • Pinch of salt
  • 14 ounces Greek or nonfat yogurt
  • 1 tablespoon orange extract, optional
  • Zest of 1 Florida Orange
  • 3 tablespoons freshly squeezed Florida Orange Juice
  • ½ cup melted white chocolate
  • 4 eggs

Garnish:

  • 1 Florida Orange, sliced
  • Edible flowers

Instructions

  1. Preheat oven to 350°F. Mix finely ground graham cracker crumbs, sugar, and melted butter until combined. Press evenly into a parchment-lined round pan.
  2. Bake 10-15 minutes until set. Let cool slightly. Turn the oven down to 325°F.
  3. In a large bowl, beat softened cream cheese, sugar, and salt until smooth. Add yogurt, orange flavoring (if using), orange zest, and orange juice. Mix until fully combined. Stir in melted white chocolate.
  4. Mix in eggs one at a time, folding the sides of the bowl after each addition to keep the batter smooth.
  5. Pour filling over crust. Wrap the pan with aluminum foil and gently tap on the counter to release air bubbles.
  6. Place in a water bath and bake 50–65 minutes, until the center is set but still slightly jiggly.
  7. Turn off the oven, crack the door open, and let the cheesecake cool inside for 30 minutes. Then cool at room temperature for 1 hour.
  8. Cover with foil and refrigerate at least 5 hours, ideally overnight.
  9. To serve, run a hot knife around the edges to smooth. Carefully remove from the pan (flip if needed), then garnish with orange slices and edible flowers before slicing.
