Ingredients
- 1 lb. large shrimp, peeled and deveined
- 2 Florida Oranges, peeled and segmented (or cut into bite-size pieces)
- 4 cups chopped salad mix (or shredded red cabbage, savoy cabbage, carrots, and green leaf lettuce)
- 1 cup General Tso sauce
- 4 tablespoons fresh Florida Orange Juice
- ¼ cup edamame
- ½ cup chow mein noodles
- ½ cup sliced green onions
- 1/2 teaspoon crushed red pepper flakes (optional)
Instructions
- Prep the salad: Chop the salad kit ingredients if needed, or shred cabbage, carrots, and lettuce. Place the salad base in a large bowl.
- Heat a skillet over medium heat. Add shrimp, General Tso sauce, and orange juice. Cook 3-4 minutes, stirring, until shrimp are pink and coated in sauce. Set aside.
- Gently fold the orange segments into the salad base.
- Top the salad with the warm cooked shrimp.
- Sprinkle chow mein noodles, sliced green onions, edamame, and crushed red pepper flakes over the top. Toss lightly before serving so the shrimp and sauce lightly dress the salad.
