Ingredients
- 1 Florida Orange
- 1 Florida Grapefruit
- 1 cup arugula
- 1 tablespoon pomegranate seeds
- 1 tablespoon pine nuts
- 1/3 cup goat cheese
- ½ fennel, thinly sliced
- 1-2 tablespoons olive oil
- 2 teaspoons honey
- 1/8 teaspoon salt
- 1/8 teaspoon pepper
Instructions
- Peel and cut the orange and grapefruit into segments. Save a little juice.
- Thinly shave fennel.
- Arrange arugula on a plate. Add fennel, citrus segments, and goat cheese.
- In a small bowl, mix some of the reserved orange and grapefruit juice, olive oil, honey, salt, and pepper. Whisk until combined.
- Drizzle dressing over the salad. Top with pomegranate seeds and pine nuts.
