Ingredients

  • 10-12 shrimp
  • 1 Florida Grapefruit
  • ½ avocado, cubed
  • 1 cup spinach
  • 1 small cucumber, sliced and ribbon sliced
  • ½ cup crushed pistachios
  • 2 tablespoons olive oil
  • 1/8 teaspoon salt
  • 1/8 teaspoon black pepper
  • Fresh parsley, optional

Instructions

  1. Grill the shrimp for 2-3 minutes per side until cooked through. Set aside.
  2. Peel and cut the grapefruit into slices and then into halves. Save a little juice.
  3. On a plate, layer spinach, cucumber, grapefruit, shrimp, and avocado.
  4. Drizzle olive oil and reserved grapefruit juice over the top.
  5. Sprinkle pistachios, parsley, salt, and pepper.
