Ingredients

  • 1 whole chicken
  • ½ cup freshly squeezed Florida Orange Juice
  • 3-4 cloves garlic, minced
  • 1 tablespoon herb mix (thyme, rosemary, or mixed herbs)
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Garnish:

  • Orange slices
  • Fresh thyme or rosemary

Instructions

  1. Preheat the oven to 375°F. Pat the whole chicken dry with paper towels and place it in a roasting pan or sheet tray.
  2. In a small bowl, mix the orange juice, garlic, and herbs. Rub or pour the mixture over the chicken, coating it well. Season with salt and black pepper to taste.
  3. Place the chicken in the oven and roast for about 1 hour to 1 hour 15 minutes, or until the internal temperature reaches 165°F in the thickest part of the thigh. Baste the chicken with the pan juices once or twice during cooking if desired.
  4. Remove the chicken from the oven and let it rest for 10 minutes before carving.
  5. Transfer to a serving platter and garnish with orange slices and fresh herbs.
