Ingredients
Enjoy a light, flavorful meal of chicken parmesan wraps accompanied by a mixed green salad tossed in a tangy grapefruit vinaigrette.
- 2 ounces grilled chicken breast (time saver: use skinless rotisserie chicken)*
- 2 tablespoons shredded parmesan cheese*
- 2 tablespoons chopped fresh basil
- 2 corn tortillas
For Grapefruit Vinaigrette:
- 2 tablespoons 100% Florida Grapefruit Juice
- 2 teaspoons olive oil
- 1 teaspoon Dijon mustard
- 1 teaspoon honey or 100% maple syrup
- Dash of cayenne pepper
- 2 cups mixed salad greens
- 1/4 cup shredded carrots
Instructions
- Put chicken, cheese and basil in tortillas; serve warm or room temperature. Whisk grapefruit juice, oil, mustard, honey and cayenne. Toss with greens and carrots.
*Vegetarian/vegan: Swap chicken for 3 ounces grilled tofu (about 1/4 package); swap cheese for 2 tablespoons hummus.
