Ingredients
- 2 medium Florida Oranges
- 2 tbsp. Florida Orange Juice
- 1 tbsp. olive oil
- 1 tbsp. Dijon mustard
- ¼ cup minced cilantro
- 1 tsp. minced garlic
- ¼ tsp. cumin
- ¼ tsp. pepper
- Dash of salt
- ¼ cup crumbled feta cheese
- ¼ cup chopped red onion
- 1 ½ cups black beans, drained
- Romaine lettuce leaves
Instructions
- Peel and segment Florida Oranges.
- Combine Florida Orange Juice, olive oil, mustard, cilantro, garlic, cumin, salt and pepper in a large bowl.
- Add Florida Orange slices, feta cheese, red onion and black beans and toss well.
- Serve salad mixture over romaine lettuce leaves.
Note: If preparing in advance, refrigerate salad and bring to room temperature before serving.
