Pink Grapefruit and Mint Cooler

Cool down with a Pink Grapefruit and Mint Cooler, perfectly balanced with club soda for a refreshing summer drink.

Ingredients

  • 2 cups pink Florida Grapefruit Juice
  • 1 bunch fresh mint, reserve 6 sprigs for garnish
  • 4 tablespoons freshly squeezed lemon juice
  • 1/2 cup water
  • 1/2 cup sugar
  • 2-1/2 cups club soda

Instructions

  1. In large pitcher, crush the mint leaves lightly and add grapefruit juice. Infuse at room temperature for 30 minutes. Add the lemon juice. Heat water until very hot; dissolve sugar in water to make sugar syrup. Add sugar syrup to taste to grapefruit juice mixture; stir well. Fill six tall glasses half full with grapefruit juice mixture, add cubed ice and top with club soda. Garnish with fresh mint sprigs. Refrigerate leftovers.
