Florida Orange Juice Glaze:
- 1 cup Florida Orange Juice
- 4 tablespoons honey
- 4 garlic cloves, finely minced
- ¼ teaspoon smoked paprika
- ¼ teaspoon kosher salt
- ⅛ teaspoon freshly ground black pepper
- 3 tablespoons unsalted butter, cut into pieces
Shrimp:
- 1½ pounds jumbo shrimp (16–20 count), peeled and deveined, tails on
- 1½ teaspoons kosher salt
- ¾ teaspoon smoked paprika
- 2 tablespoons finely chopped fresh flat-leaf parsley
Instructions
- Heat the oven to 425°F and position a rack in the upper third. Line a half sheet pan (13×18″) with parchment paper.
- In a small saucepan over medium heat, combine the orange juice and honey. Bring to a steady simmer and reduce, stirring occasionally, until syrupy and reduced to about ⅓ cup, 15-20 minutes. The glaze should coat the back of a spoon and pull into a slow drip.
- In the last 2 minutes of reduction, stir in the garlic. The simmering syrup will gently cook the garlic without scorching, taking the raw edge off.
- Remove from heat and whisk in the smoked paprika, kosher salt, and pepper. Add the butter pieces a few at a time, whisking constantly, until melted and emulsified into a glossy glaze.
- Meanwhile, pat the shrimp very dry with paper towels on both sides — excess moisture will steam the shrimp instead of roasting them. In a medium bowl, toss the shrimp with the 1½ teaspoons kosher salt, ¾ teaspoon smoked paprika, and a few grinds of black pepper. Set aside.
- Pre-coat the shrimp. Add 2–3 tablespoons of the warm glaze to the seasoned shrimp and toss to coat lightly. Spread the shrimp in a single layer on the prepared sheet pan. Reserve the remaining glaze and keep it warm.
- Bake for 4-5 minutes, until the shrimp are just opaque (slightly underdone is fine — the broil step finishes them).
- Switch the oven to broil. Brush the shrimp generously with most of the remaining glaze, reserving a few tablespoons for serving. Broil for 1-2 minutes, watching closely, until the glaze bubbles and caramelizes at the edges into a deep amber color.
- Scatter the parsley over the pan and finish with flaky salt if desired. Serve immediately with your favorite sides. Drizzle the reserved warm glaze over the shrimp or serve it on the side as a dipping sauce.
