Salmon Tacos with Florida Grapefruit Avocado Salsa

Ingredients

Taco Ingredients

  • 1 ½ lb. salmon, boneless with skin on
  • ½ tsp. salt
  • ½ tsp. black pepper
  • ½ tsp. chili powder
  • ½ tsp. paprika
  • ½ tsp. garlic powder
  • Corn tortillas

Grapefruit Avocado Salsa Ingredients

  • 1 Florida Grapefruit, peeled and cut into chunks
  • 1 avocado, peeled, pitted and cut into chunks
  • ½ jalapeno, diced
  • ¼ cup red onion, diced
  • ¼ tsp. salt
  • ¼ tsp. pepper

Instructions

  1. Turn your oven broiler to high.
  2. Line a rimmed baking sheet with aluminum foil. Place the salmon skin side down on the lined baking sheet.
  3. In a small bowl, combine salt, pepper, chili powder, paprika and garlic powder. Stir to combine.
  4. Sprinkle the spice mixture over the top of the salmon, pressing it in an even layer on the top. Place the pan of seasoned salmon under the broiler and cook until done, approximately 10 to 12 minutes.
  5. In a medium bowl, combine the ingredients for the Florida Grapefruit avocado salsa. Stir to combine and set aside until ready to serve.
  6. When the salmon is done, separate the flesh from the skin. Use a fork to break the fish up into small pieces and save in a bowl.
  7. Place corn tortillas in the microwave and heat for approximately 20 to 30 seconds until soft and flexible.
  8. Divide the fish evenly among the corn tortillas. Top each taco with Florida Grapefruit avocado salsa.
  9. Serve immediately and enjoy.
