Ingredients
1 Florida Grapefruit, segmented and juiced
1 cup cherry tomatoes, sliced in half
1/2 cup buffalo mozzarella, torn into small pieces
2 tbsp. olive oil
1 cup balsamic vinegar
2 sprigs fresh basil
Salt and pepper to taste
Preparation
1. Marinate the Florida Grapefruit segments in ½ cup of the balsamic vinegar, add the remainder to a small pot over medium heat and reduce by half.
2. Combine the tomatoes, mozzarella, and Florida Grapefruit slices in a bowl and toss; arrange on a plate and drizzle the vinegar reduction and olive oil over top.
